Cauliflower Pulao & Malai Kofta!


People generally get confused with Biryani and Pulao.Both the dishes have 'rice' and 'meat' as basic ingredients which are seasoned with appropriate spices.Pulao and Biryani dishes were perfected during the era of Mughal emperors of the subcontinent,in their royal kitchens staffed by the famous Persian and Indian chefs of the day.
Pulao ,which is also spelled pilau, perloo, perlau, plaw, pilaw, and pilaff is from the Middle Eastern and South Central Asian countries.While Biryani had its origin in India and Pakistan.Pulao or pilaf uses a one pot cooking method where the meat is partially cooked first with the special seasoning and then the rice is added on top and the cooking is completed on a low flame in a large pot with a tight fitting lid.
For Biryani the meat and rice are each separately fried with seasonings and each is gently cooked to the half done point. Then they are assembled together in layers and the cooking is completed to full done, on a low flame in a tightly covered pot.
Another major difference between Pulao and Biryani is that,Pulao is relatively less spiced than Biryani.
In India,people also confuse Fried rice with Pulao/Biryani.Fried rice is basically a Chinese Rice,which involves parboiling the long grained rice separately and tossing the rice with Chinese seasonings and crisply sauted vegetables in a wok.
When it comes to Pulao ,there are endless variations one can make.Cauliflower pulao is one of the variations which could be practically done in 20 mins .
This pulao is mild and it goes well with the rich and delicious 'Mughlai Malai kofta '.The creamy sauce of the Malai kofta compliments very well with the rice and kofta.
Kofta means 'dumplings' which could be made with vegetables or cottage cheese or minced meat.
Koftas are also brought to Indian cusinie by the Persians.According to a 2005 study done by a private food company, there were 291 different kinds of kofta in Turkey, where it is very popular. In Arab countries, kofta is usually shaped into cigar-shaped cylinders.
So today we are going to see these historically enriched dishes,'Pulao and Malai Kofta'.

MUGHLAI MALAI KOFTA


For the gravy:
You will need:
1 cup of pureed tomato
3/4 cup of minced onion
1 table spoon finely chopped ginger
3 table spoon butter
2 tablespoon broken cashews
1 cup fresh cream with milk
1 teaspoon chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon garam masala
A pinch of turmeric
1 teaspoon cumin seeds
Salt for taste
Sugar 1 teaspoon
Cliantro for garnishing


Melt butter in a heavy bottom vessel and add the cumin seeds and allow to splutter.Add the minced onion and and ginger and cook till the onion gets the light brown color.
Tip:Adding the salt at this stage helps the onion to cook faster.


Add the pureed tomatoes and dry spices .Cook with lid covered until the butter separates from the gravy.Add sugar and more salt if required.


Add the milk and cream.Stir and cook in simmer for a couple of mins and turn off.If more gravy is required add more milk but do not use water.
Note:Its better to make more gravy than required as the kofta will absorb the gravy.




For the Kofta
You will need:
1 cup boiled and mashed potato
1 cup parboiled and finely chopped carrots
1 cup crumbled Paneer
1 table spoon Raisins
1 table spoon broken Nuts(cashews,pistachios and almonds)
1 table spoon chopped cliantro
1/2 teaspoon chilli powder
1/2 teaspoon coriander powder
1/2 teaspoon jeera powder
1/2 teaspoon garam masala powder
Salt for taste

For the Batter
1 table spoon Corn flour
1 table spoon Maida(All purpose flour)
A pinch of salt

Oil for frying


Mix together all the ingredients of kofta using hand or in food processor.



Make lemon sized koftas with the combined mixture.Make a batter with the corn flour,Maida,salt and water.It should of ribbon consistency.


Deep fry the kofta in oil by coating well in the batter.It can be deep fried in high flame and taken out quickly.Because all the contents of kofta is precooked and we just want the outer portion of the kofta to be just browned to retain its shape once its dropped in the gravy.




Drain excess oil in a paper towel.



Just before serving add the koftas in the gravy .Garnish with cilantro and drizzle some 'Malai' (Milk Cream)..
Note:The koftas may tend to break if its soaked in the gravy for long hours.So its always advised to add the koftas in the gravy just few mins before serving.

CAULIFLOWER PULAO



You will need:
1 moderate sized cauliflower-separated into small florets and washed thoroughly
Basmati rice-3 cups
1 cup fresh/frozen green peas
2 medium onions-julienned
1/4 cup grated coconut
1 inch ginger
5 garlic cloves
6 green chillies
1/2 cup curd
spices(bay leaf,sauf,Cinnamon,cloves..)
3 tablespoon ghee
2 tablespoon oil
salt to taste
1 tablespoon cashews broken and roasted in ghee (optional)
Chopped cilantro

Procedure:
Wash the rice once(Basmati has to be washed once only to retain the flavour) and soak in 5 1/2 cups of water for minimum of 30 mins.



Ground together coconut,garlic,ginger and chillies to a smooth paste.
In a pressure cooker,heat oil and add the spices and allow it to sputter.



Add the onions and saute for a couple of mins.Add the ground paste and cook in low flame till the raw smell goes away.
Add the peas and cauliflower florets, saute for a min.In the mean time completely drain the rice and collect the water in a vessel which will be used for cooking the pulao.
Add the drained rice to the vegetables and add 1 tablespoon of ghee and mix gently in medium flame.This process will help the rice to retain the shape of rice and the pulao wont be sticky.



Now add the water , curd and salt.Bring the mixture to boil..Add the remaining ghee.
Pressure cook them for 3 whistles in medium flame and 5 mins in low flame.Do not cook in High flame as it gets browned in the bottom easily.
When the steam is released,gently open them and sprinkle the roasted cashews and chopped cilantro.Serve with any gravy.

Try this sumptuous meal in a leisurely weekend and enjoy!

Basundi/Rabdi



Basundi is a very popular Maharastrian dessert.It is actually sweetened, evaporated milk and it is generally served with Puris in Maharastra.Yeah,Puris with Basundi is fascinating.They also serve Puris with Aamras(Mango Puree).I have tasted basundi in restaurants but not in our home.My mom never prepared them at home as it involves lots of patience.It took 1 hour and 20 mins for me to make this dish.But when I tasted it,it was all worth for every second I spent making it.My sistor has a big sweet tooth and she was demanding me for a long time to make this sweet for her.So I made it painstakingly for my lovable sis :-)...I have heard people using corn flour to thicken it quickly.But I don't recommend that idea as you could smell it very distinctly..
In northern India,Basundi is called as Rabdi/Rabadi..
If you use Buffalo's milk,it would be more richer..



You will need:
Toned Milk-1 litre
Condensed Milk-1/2 tin
Sugar-5 Tablespoons
Caradamom powder-1 Tablespoon
A big pinch of Kashmiri Saffron
Pistachios/Cashews for Garnishing




In a heavy bottomed vessel,bring the milk to boil .Add the condensed milk and Saffron strands. Combine well..


Keep the flame in medium and after a while a layer will be formed .Gently with the help of a spoon remove the layer from the milk and transfer it in a bowl.




This milk should be reduced to 1/4th .It will take approximately 1 hour and 20 mins.Do not forget to collect the milk layers formed inbetween.




Add the sugar and cardamom powder.And let the sugar to disslove.Add the collected milk fats to the thickened milk and simmer for few mins and remove from fire.
Garnish with Pistachios or any nuts of your choice.







NOTES: Adding orange flesh with some orange juice to the Basundi and refrigirating overnight givest lip-smacking 'Orange Basundi'..

Navrathiri Kolu..



Navrathiri/Dussehra is a festival of nine days for the three Hindu goddess Durga,Lakshmi and Saraswati for 3 days each.It is celebrated in different ways through out India.Gujarathis celebrate with Dandiya Raas.
Bengalis call it as Durga puja,which is the single most important festival of Bengalis.It is reveled with intense fervour and zest.Punjabi's Navrathiri is primarily a period of fasting.
While in TamilNadu,Karnataka and Andhra Pradesh it is called as Bommaikolu,which is actually arranging the dolls in temporarily constructed staircase.Women and children are invited every evening and they together sing songs and tell stories about the dolls/idols displayed in the Kolu.
And they are offered Sundal as prasadham.In Mysore,Dussehra is rejoiced with a procession of elephants in gaily dressed streets of the city..
I personally like Navrathiri festival more than other Hindu festivals.Because, you are into lots of activites and its the longest Hindu festival(NINE DAYS!)..
I recall my childhood Navrathiris associated with my cousin B.My aunt and Sistor G attired us as little Krishna and Yasodha .And we were taken to all the negihbouring homes to invite the aunties and the other kids to the Kolu.It was all lovely and full of fun.I also remember faintly from the picture of me in Garba dress,celebrating Dussehra with the Gujaratis and performing the Garba dance with the other kids.We were in Baroda(Gujarat) when I was 5 years old.It was altogether a beautiful experience which is filled with enthusiasm.
This year our Navrathiri kolu is set with five steps.Traditionally,Kolu steps are kept in odd numbers.I thought of putting the pictures of our kolu here,so that everybody could have our Kolu Darshan.Especially for my Dad , at Kuwait ,really miss this wonderful event every year.
I think this time I could compensate it to some extent through this post.


We created a 'park' like thing also!?

A Buddist monk is in meditation..And a gang of mischevious boys are in real mood to agitate the harmony of the monk..

'Aval Payasam' is kept for Neivedyam along with other Puja items.

Navratna Korma!



Navrathiri has started and so Im presenting Navratna korma as today's special.'Navratna' means nine jewels.Well,you can choose any fruits/vegetables/nuts for the nine jewels.Last weekend,my aunt and uncle came for lunch at our home.So I decided to make this korma for two reasons.
1. It is exotic .
2.I wanted to post this recipe here for Navrathiri special :-)
The best part in making this gravy is choosing the navratnas.I was browsing my fridge for a long time and chose them with varied colors and tastes.So that it is not only a visual treat but also tingles the taste buds with sudden surprises.The raisins and apple chunks played the great role in giving the sweet surprises while the nuts provided the crunchy bites.
I also made french fries,Green salad,Peas pulao,Tadka curd rice and Badam kheer for the lunch.
As of now,Im posting only Navratna Korma...



The NAVRATNAS:
1 carrot-chopped
1 cup cubed paneer and fried in oil/ghee
3 beans-chopped
1 apple-peeled and chopped
1 potato-peeled and chopped
1/2 cup- corn kernels
8 cashews -roasted in ghee
8 Almonds-roasted in ghee
2 Tsp Raisins




For the Gravy:
1 Big Onion-finely chopped
2 tablespoon tomato puree
1/2 cup milk
2 tablespoon fresh cream
1 tsp ginger-garlic paste
1 tsp Chilli powder
1 tsp garam masala
A pinch of turmeric
1/2 tsp sugar
Salt to taste
2 tsp oil



Heat oil and saute onion and ginger-garlic paste until the onions become transculent.



Add the tomato puree,salt,sugar,chilli powder,turmeric powder and cook for a couple of mins.
Add the potatoes,carrots,beans ,corn and few tablespoons of water.Cover with lid and cook till the vegetables are tender.


Add milk and fresh cream and bring to boil.The gravy thickens .Sprinkle the garam masala and give a stir.


Add the fried paneer,nuts,raisins and apple. And remove from fire immediately..


Garnish with cream and chopped cilantro..


Verdict:The gravy was rich and yummilicious.But the vegetables were bit undercooked and I felt that the nuts must be broken into smaller bits..Inspite of that, We enjoyed till the last bit..
