Adai & Avial~The jodi no.1

Adai served with avial,jaggery and a blob of butter..

According to me adai-avial is the most healthy tiifin..It is not only tasty but nutritious also..The Adai has four different pulses ,rice and the mixed vegetables of avial which altogether contributes a hearty,filling meal...The crispy adai with the tenderly cooked vegetables is heavenly..
Adai(Lentil crepes) is a kind of dosa which is thick and spicy.It can be served with avial,chutneys,ghee/butter and jaggery.
Avial is basically a dish from kerala which later became popular in tamil cuisine.The flavour of coconut and cumin-ginger paste with the perfectly cooked vegetables is tantalizing!The beauty of avial is you can add any vegetable under the sky.And this dish demands minimum of 5 different vegetables.We had adai & avial for dinner today and they were fantastic.

Recipe for Adai..

You will need:
1 cup of par boiled rice
1/2 cup chickpeas
1/2 cup tuar dal
1/4 cup urad dal
1/4 cup moong dal
5-6 dried red chillies
2 tsp coriander seeds
2 tsp grated coconut
1/4 cup small onions/scallions -finely chopped
A big pinch of hing/asfotedia
Salt to taste

1.Wash and soak the rice,lentils along with the chillies and coriander seeds for 3-4 hours.
2.Grind the soaked rice & lentil mixture to a coarse paste.
3.Add the grated coconut,chopped onion,hing and salt.Mix well.
4.Heat the non-stick tawa/iron griddle and gently spread the batter into a thick layer.Drizzle some oil on and around the adai.
5.Cover with a lid(helps faster cooking) for a min.When the adai turns crispy flip and cook for a min..

And here you go for a crispy,flavorful adai...

Recipe for Avial..






You will need:

3 cups of any vegetables like raw banana,carrot,beans,potatoes,peas,pumpkin,drumstick etc..cut into bite sizes or in strips..
1/4 cup grated coconut
2-3 green chillies
1 inch ginger
1 tsp cumin seeds
1/2 cup yogurt
1 tsp coconut oil
salt to taste


Bring water to boil and add the vegetables and salt.Cover and cook till they are tender but not mushy..


Grind coconut,cumin seeds,chillies and ginger to paste.Add the paste to the cooked vegetables and mix well.Cook for a couple of mins..

Add the curd and mix well..Turn off the heat and garnish with a tsp of coconut oil ..

The aromatic avial is ready!
